Why Wouldn't God Want Adam and Eve to Have Knowledge of Good and Evil?

There wasn't any real free-will if God knew Adam and Eve would eventually eat the fruit. It's impossible for a being like God to set up a scenario where He doesn't know how it all's gonna turn out. Saying God gave them all they needed is a Deux Ex Machina fallacy. God knew all along how it all would end. And worse than that, how can you judge and punish the actions of beings without the knowledge of good an evil. That would also imply Adam and Eve didn't have any reasons to think God was good and Satan was evil or vice verse, or that good was what they should do or that evil was what they shouldn't. They didn't even know whether obeying God was good or evil, or which good or evil they were supposed to choose. It's like punishing a baby after giving them instructions in a language they don't speak.
